Thanks to Pinterest, I found this snack idea while searching for an after school treat for the kids. It’s fun to surprise them from time to time with a special treat waiting for them when they get home. Okay, who am I kidding? I needed something sweet to eat and I used my kids as an excuse to make it. 🙂 Here’s the simple recipe if you find yourself in the same boat.
3 bags microwave popcorn, popped with unpopped kernels removed
2 sticks of butter
16 ounce bag of mini marshmallows
1 cup brown sugar
In a microwave safe bowl, melt the butter, marshmallows and brown sugar for 2 1/2 minutes. Stir. Microwave again for 1 minute. Repeat until completely melted. Pour butter mixture over the popcorn and stir to coat. Let cool and dig in.
